In the Karama neighborhood of Dubai, a kitchen is bustling with activity on the eve of Eid, even though most of the neighborhood is asleep. All hands are on deck for the entire week, from chopping meat to peeling onions, as the City Makani restaurant gets busy preparing meals for Eid Al Fitr starting at 3 am.
The restaurant’s managing partner, Muhammad Shahdas, stated, “Normally, we close at around 3 am during Ramadan, but on the eve of Eid, we send our main chefs home before midnight so they can rest.” “We finish the basic cutting and chopping by the time they return around three in the morning. We begin preparing our biryani around five in the morning.”
As families and friends gather for a holiday feast during Eid week, restaurants around the United Arab Emirates are gearing up for the massive biryani demand. Residents may receive a respite this year of either nine days if Eid Al Fitr falls on Tuesday, April 9, or six days if it falls on Monday, April 8. After a month of fasting, the Eid holidays are a time for big gatherings of friends and extended family to share massive meals. During the holidays, large gatherings are not unusual.
“We have a special Eid breakfast with lots of singing and dancing,” Shahdas stated. “We offer a wide variety of authentic Keralan cuisine. Many patrons visit our restaurant for brunch just after the Eid prayers. Our restaurant is practically a wedding celebration.”
